Fresh Armenian Cucumber Tomato Herb Salad

I found Cucumber Tomato Salad to be a staple in Armenian diet. Aside from being fresh, healthy and tasty, preparation is fast and easy!--perfect for every day busy lifestyles. Here's my favorite version of this recipe. Enjoy!

1 cucumber, pealed and sliced

1 tomato, cut into wedges

Parsley (to taste), chopped

Basil (to taste), chopped

Black pepper (to taste)

Salt (to taste)

White vinegar (to taste)

Light flavored cooking oil such as corn or sunflower (to taste)

1/4 Lemon

Arrange the cucumber and tomato on a serving plate. Sprinkle parsley, basil, black pepper and salt. Drizzle white vinegar and oil. Finish off with squeezing lemon juice over salad.
